The serrated bread knives are characterised by their sections of grooves that run perpendicular to the blade edge to enable cutting without the use of excessive force. Perfect for cutting through hard crusts of bread loaves, baguettes, bagels, and for soft items such as tomatoes, cakes with fluffy textures; primarily for most foods with a hard exterior but soft interior. Bread knives do not require any sharpening usually. Should one wish to sharpen a bread knife, this would require the use of a ceramic rod known as a “crock-stick” which enables the sharpening of the serrated grooves segments on the knife’s blade.

    Made by skilled artisans in Tsubame, Niigata. The result of hundreds of years of knife making skills stretching back to the times of the Samurai.


    A tough inner core of VG5 steel sandwiched between two layers of softer SUS410 stainless steel is the hallmark of the Tamahagane series. The edge is bevelled to a 15-degree angle and hand-finished using waterstones. Tamahagane knives are perfectly sharp straight out of the box.


    Tamahagane San features a brown micarta handle with weighted balance. It is made with a 3-ply stainless steel construction. The middle layer is VG-5 steel which forms the edge of the blade. The two outer layers are made of SUS-410 stainless steel, which is softer and more stain resistant in order to protect the cutting edge. All knives including paring, utility and vegetable knives, Santoku, Nakiri and chef kitchen knives, filleting boning and carving knives are hand finished and checked.
