Global Knives: The Full Buying Guide - SAI vs UKON

Quick picks at a glance
Best for visual impact and premium balance: Global SAI - individually hammered 3-ply stainless steel blades, ultra-hard Cromova18 core, weighted hollow handles and a distinctive seven-dot handle design.
Best for sharper out-of-the-box performance and everyday control: Global UKON - thicker blades, precise grinding, 10% sharper out of the box and an improved ergonomic thumb rest for extra comfort.
Global SAI - the premium hammered statement range
What it is: Global SAI was the first new knife range developed by Global in 30 years, designed to offer something more distinctive while retaining the brand’s iconic Japanese stainless-steel style. Each blade features a 3-ply stainless steel construction, with a core of ultra-hard Cromova18 stainless steel and two outer layers of steel for added strength and corrosion resistance.
The most noticeable feature is the individually hammered blade pattern, which gives every knife a unique finish. The hollow handle is carefully weighted, as with all Global knives, helping to counterbalance the blade. The seven dots on the handle represent the seven noble virtues of the Samurai code: integrity, courage, compassion, respect, honesty, honour and loyalty.
How it feels in hand: SAI feels like the more premium and visually considered range. The hammered blade gives it extra presence, and the 3-ply construction makes it feel more substantial than the classic Global style without losing that familiar lightweight Japanese feel. In the hand, it still has Global’s clean stainless-steel balance, but the thumb rest gives you a little more guidance and comfort through repeated slicing.
Compared with UKON, SAI feels slightly more refined and decorative. It is the one you would choose if you want a knife that performs well but also looks like a centrepiece on the worktop. It has that precise Global feel, but with a more crafted, collectable edge.
Best for: Cooks who want Global’s iconic Japanese stainless-steel design with a more premium finish. SAI suits serious home cooks, design-conscious kitchens and anyone who wants a knife that feels functional, balanced and visually special.

Global UKON - sharper, thicker and built for confident everyday use
What it is: Global UKON keeps the same all-stainless-steel identity that made Global famous, but updates the design with thicker blades, improved ergonomics and more precise grinding. The blades are crafted from ultra-hard Cromova18 stainless steel, ice tempered and hardened for edge retention, corrosion resistance and long-term durability.
The key selling point of the UKON range is that the knives are designed to be 10% sharper out of the box. They also feature a thicker blade profile than the classic Global design, giving them a more robust feel in use. The handle retains Global’s hollow, perfectly weighted construction, but adds an ambidextrous thumb rest positioned closer to the blade for improved control and efficiency.
How it feels in hand: UKON feels more work-focused than SAI. The thicker blade gives it a touch more confidence through everyday prep, especially when cutting denser vegetables or working quickly through repeated chopping tasks. It still feels unmistakably Global: light, balanced and clean in the hand, but the improved thumb rest makes it feel a little more secure than the older classic handle shape.
Compared with SAI, UKON feels less decorative but more direct. It is the knife you would reach for if your priority is sharpness, control and everyday practicality rather than a showpiece finish. The handle improvements are especially noticeable if you like a pinch grip or want the knife to sit naturally in your hand during longer prep sessions.
Best for: Cooks who want a sharper, more robust everyday Global knife with improved comfort and control. UKON is ideal if you like the Global look but want a more performance-focused feel than the classic range.
