Carbon Steel knives have a different composition to stainless steel knives, and require some TLC to look after them. The advantage of these knives is a vastly superior cutting edge and edge retention benefit, however the metal needs looking after as outlined below.

Care and Maintenance

After each use the Ideal Carbon knives are to be washed and quickly dried before any extended exposure to moisture as this can enhance the development of rust. We always recommend these knives are to be kept in sleeves or a closed draw/cupboard away from high moisture atmospheres in the kitchen. 

Carbon steel knives require a little extra care to prevent rust, but the maintenance is easy - simply wash and dry the blade after each use, as should be done with any knife. It is also recommended to occasionally oil the blade if it won't be used regularly or stored for a long time. Don't worry about the colorful patina that will develop over time; it's a natural and necessary part of using these cherished knives, much like seasoning a cast iron pan. If red rust appears due to neglect, it's vital to remove it right away to avoid damage, which can be done with metal polish or kitchen cleanser.

Carbon steel knives will and should change colour upon contact with acidic foods, this is considered totally normal, and is part of the ownership of a high carbon blade.
